Green Onion Roll Ups!

I don’t know where my dad came up with these little snacks but I remember eating them all throughout my childhood. We were easily convinced to eat raw green onion stalks as if we were chomping on a lollipop. We never cooked with tons of onions in the first place so its always kind of surprising to look back and remember how much we loved these! They’re super easy to make and a quick little snack. Just be prepared for some pretty strong onion breath!

Green Onion Roll Ups

Ingredients

Green Onion Stalks

Cream Cheese

Corned Beef slices (I’m sure you can use other sandwich meat, this is just what we always used)

Instructions

Cut your Onion stalks down

Spread a tablespoon or two of cream cheese across one half of the slice of corned beef.

Place your onion in the center of the cream cheese and fold over the corned beef.

After further contemplation and the realization that a good portion of the onion stalk gets tossed (for some reason I never eat it to the end) You could not fold it over and spread the cream cheese all over the corned beef and just roll more of the onion compared to just the end.Β 

Roll it up and enjoy! They don’t always stay perfectly rolled but they just go into your mouth so who cares right!?

These are really simple and you can totally do different variations; maybe use turkey? or ham? or roast beef? Whatever your preference is. Be sure to stock up on breath mints!
