Get up and Go Breakfast!

You will see me talk alot about breakfast, because ultimately breakfast is the hardest meal for me to incorporate so when I get a great recipe/idea for breakfasts that don’t take a lot of time in the morning (HELLOOO 15 extra minutes of sleep! Sign me up!) and I can toss in the freezer and last a week or two I get excited.

I found this recipe for breakfast bites at Ella Claire using tortillas. I had seen another that had used croissants (but for the life of me I can’t find it) but for the most part I took my idea from the one at Ella Claire.

These are easy, don’t take long and can be made ahead and frozen. All ya gotta do is toss it in the microwave and voila! perfect little breakfast while I’m putting my makeup on!

I was initially going to do all Croissants, but silly me, I only bought one package of croissants. I had purchased tortillas too because I was going to make Breakfast Burritos as well (and regular burritos for lunches! I love me some burritos) So I just combined both in one pan.  Now this is for a HUGE batch. I used what I needed for the bites and the rest to make Burritos.

Breakfast Bites (Croissants & Tortillas) 

Red Pepper

Yellow Pepper

Green Pepper

Orange Pepper

1/2 Red Onion

15 Eggs

1 1/2 cups of cheddar cheese

3/4 cup of heavy cream

Sausage (optional)

Bacon (Optional)

Ham (optional)

Package of Croissants (2 if you’re doing all croissants, I package makes about 7 bites)

Package of Tortillas

Instructions

I diced all my peppers and onions into very small pieces. and placed them all in a large bowl.

Preheated my oven to 350 F and greased my muffin pan with a little bit of cooking spray.

Cracked all my eggs into the bowl with the peppers and onions and tossed in the cheese. This is also when you would add the Sausage/Bacon/Ham if you so desire. I actually forgot and added the sausage after when I cooked up the eggs for my burritos.

Mix that baby all up with the heavy cream!

Line each cup with either a croissants or tortillas. For the tortillas, I cut them into quarters.

Ladle a little bit of your egg mixture into each cup and place in the oven. I probably should have looked at the time but I was checking frequently to make sure they were done. I think about 10-15 minutes. (I finally got an oven thermometer!)

They were cooked perfectly! and Look delicious. It took a lot to not eat them, but I opted not to because I knew that they would be gone before I could even get to breakfast!

So after I finished making my dozen breakfast bites, I moved on to the burritos. I had a ton of egg mixture left over. I had some pre-cooked sausage that I tossed into a large saute pan (best xmas present ever!) and added my egg mixture. From every thing I read on line, it was important to make sure it cooled prior to assembly. So I did just that. Wrapped those babies in my left over tortillas and popped them in the freezer.

I didn’t take pics of the assembly, but its pretty simple, I’m sure you can figure it out. Overall I made a dozen breakfast bites and 7 breakfast burritos! A great month’s worth of breakfasts!
